Yak Dar Behesht - Persian Pudding

Yakh Dar Behesht is a Persian Rice Pudding which literally means Ice in Paradise . Yakh is Ice , Dar is in and Behesht is Paradise . The dessert has been so aptly named .

Yakh Dar Behesht is a milk based dessert , which is very delicate and aromatic . The dessert is soft , light and tastes divine . The Rose water gives it a wonderful aroma and flavor .

The key to a lump free Yakh Dar Behesht is to stir it constantly to avoid lumps . The pudding can be served either in individual bowls or it can be be set in a big flat tray and then cut into the desired shape. The garnishing too can vary . Whatever tweaks you do , make sure you serve the dessert chilled !

Yakh Dar Behesht

Ingredients

2 cups milk
3/4 cups rice flour
2 cups water
1 cup heavy whipping cream
1/4 cornstarch
3/4 cup sugar
5 tbsp rose water
Nuts
Rose petals

Method

Dissolve rice flour in water and pour into a saucepan , place over medium heat.
Whisk milk, cream, and cornstarch in a bowl and pour into the saucepan.
Bring rice flour and milk mixture to a boil.
Add sugar and rose water, reduce heat to low and simmer, stirring constantly, until sugar is dissolved and pudding thickens.
Pour into bowls and garnish with nuts and rose petals .
Place in the refrigerator , chill and serve .

  1. When I read the recipe, it brushed across my memory and as soon as I saw the pictures, I remembered, I had cut the recipe from a magazine and stuck it in my scrap book. It was square cut pieces and I have been wanting to make this since so long… Thank you for reminding me of it. Your dessert looks just too tempting enough to stretch the hands to pick it up…

  2. smooth and creamy puddings are so appealing as desserts, not to mention relatively easier to prepare. That bowl looks so delicious and I love that contrast between the pink rose petals and the smooth white pudding
