Zero Oil Kandhari Aloo

Zero oil  Aloo Kandhari is a rich gravy dish made with onion , cashews , poppy seeds and potatoes . The name Kandhari comes from the Kanadhari deep red variety of pomegranates used for the gravy . Kanadhar is a city in Afghanistan which is famous for these deep red pomegranates.

 

While deciding my menu for the Zero Oil Thali  , I found this recipe very interesting . It uses pomegranate juice in the gravy which lends it a mildly sweet flavour, and at the same time a beautiful colour  .Cahews and poppy  seeds gives a nice texture and taste to the gravy . I added bing chunks of potatoes , but if you get baby potatoes use them they would make the dish pretty as well . Julienne green chilly gives a sharp and zingy touch to the dish , specially for those who love to bite into a green chilly while eating their meal . Well I am one of them , I simply love these green chillies . Of course you have the option of omitting them as it’s only a garnish . Adding pomegranate pearls gives the dish a lovely crunch and make sure you do not miss these .

 

 Zero oil Kanadhari Aaloo is a  fantastic dish and can be featured in your party menu . Trust me your guests would be impressed and will thank you for feeding them a delicious Zero Oil dish .

 

Zero Oil Kandhari Aloo

Zero Oil Kandhari Aaloo

Ingredients

250 gms baby potatoes /regular potatoes
1 onion , paste
1/4 cup tomato purée
5-6 cashews
1/2 tsp khus khus
2 tbsp milk
1/2 tsp Kashmiri mirch
Pinch turmeric powder
1/4 tsp garam masala
1/2 tsp kasoori methi
1 cup pomegranate juice
Garnish
Green chilly
Pomegranate pearls

Method

Boil the potatoes, peel and keep aside. If using big potatoes , cut them into chunks .
Soak cashews and khus khus in warm milk and make a paste.
Make a paste of onion and sauté in a nonstick pan till the moisture is absorbed .
Add the cashew paste and tomato purée .
Cook till dry .
Add all spices , potatoes and mix well .
Add the juice and some water to adjust the consistency of the gravy and boil for 5-7 minutes.
Add kasoori methi .
Garnish with pomegranate pearls and green chilly .
Serve hot .

Instructions

This dish actually reminds me of a non-vegetarian Iranian dish which is cooked in pomegranate juice and ground walnuts… it was so good, that I am sure that this aloo dish will be equally amazing as well…

  3. I think when cooking with zero oil non-stick pan help. Also using rich ingredients with natural oils like cashew and khus khus helps in the overall flavour. I will give this one a try.

  6. That baby aloo curry looks so rich and creamy. I can’t believe it has no oil in it — truly amazing. I guess the natural oils from khus khus, cashews and milk make up for the lack of oil. Awesome recipe.
