Aloo ja Masale wara Karela are stuffed bitter gourds with potatoes , these potatoes are seasoned with pickle spices . These make a wonderful side dish and can be served with any dal or curry .
It is the last week of BM #97 and under Special Theme I shall be posting recipes from the various thalis that I have posted earlier .
For the very first day I have these stuffed bitter gourds which were a part of Sindhi Thali that I posted a while back . Bitter Gourds or Karelas as we call them in Hindi are gourds which are actually bitter but if you marinate them the bitterness kinds of vanishes . Frying also helps in reducing the bitterness . The seeds in these gourds are quite thick and normally removed , but there are some recipes where we use the seeds too and trust me the gourds taste so delicious with them . I will surely post a recipe of the Stuffed Karelas with these seeds .
Today’s Karelas are stuffed with boiled mashed potatoes . I have used pickling spices plus a teaspoon of mango pickle masala to give it that Achaari flavour and trust me if you eat these Karelas with some hot Sindhi Fulko you sure are to love them . I have another Stuffed Karela version which has a stuffing of corn and potatoes and those too taste fantastic .
Aloo je Masale wara Karela
Ingredients
Karela
6 bitter gourds
1/2 cup yogurt
1 tbsp wheat flour
Salt to taste
Stuffing
2 large boiled potatoes
1 tbsp oil
1 tsp mix of cumin seeds , mustard seeds , fennel seeds and nigella seeds
1/4 tsp turmeric powder
1/2 tsp red chiliy powder
1/4 tsp dry mango powder
1 tsp mango pickle
Chopped coriander leaves
Salt to taste
Method
Karela
eel the skin of Karelas and make a slit .
Wash and marinate them with salt , yogurt and wheat flour for about an hour .
After one hour wash and squeeze them .
Heat oil and deep fry the whole karelas to a light pink .
Remove after frying and keep aside .
Stuffing
Heat a pan with a tbsp of oil .
Add the seed mix and let splutter .
Add turmeric and immediately add the boiled , mashed potatoes .
Add red chili powder , mango powder , salt, mango pickle and finally coriander leaves .
Mix well and switch off the flame .
Getting the karelas ready
Using a spoon scoop out the seeds from the gourds .
Fill in the prepared stuffing .
Heat a non stick pan , drizzle a little oil and place the stuffed Karelas .
Cook covered on slow flame for about 10 minutes , tossing gently once in a while .
The Karelas should be slightly golden .

I love karela and potato combination. They taste so yum. This version of stuffing looks so fantastic. I would love these with fulko.

my elder one is a BIG fan of Karela and she loves the stuffed karela which I make similarly, but in a pressure cooker. this is another version I must try for her. and PLEASE pass me that thali 🙂 its lunch time here and am ravenous…

Let me try this for my bitter gourd and potato loving husband. BTW in what way does the wheat flour in the marinade contribute?

I make karelas with only onions cooked in Indian spices like fennel seeds and coriander powder. Your version of stuffed karela with aloo mixture looks so good.Will definitely try someday.
