B - Bhungara Bateta -street food from South Gujarat

Bhungra Bateta is a street food from Saurashtra .Bhungra are fried pipes made from rice flour, just like fryums .Bateta are potatoes, cooked in a spicy garlic gravy.  The combination of the two makes it a unique dish.

 

The Saurashtra region covers many districts and this particular street food is popular in Rajkot , Jamnagar , Morbi . I have traveled a lot but when it comes to traveling in Gujrat , I still need to  and Explore the Flavours . Fortunately the Bhungra Bateta is getting very popular all over Gujarat . I have tasted this on the streets of Kutch but originally this street food is from Rajkot.

 

I must admit these potatoes are killing ! Lasooni , as the name suggests these are full of garlic . These potatoes are spicy and oily . I tried hard to add that extra oil to give them the authentic look and taste but somehow the proportion of oil and chilly available on the streets cannot be achieved at home . One thing is for sure that these should be served after a couple of hours so that they absorb the garlic and chilly flavours .

 

Bhungra , the rice flour pipes are  something like fryums . These pipes are available on most grocery stores and just need to be fried. They have just salt and no chilly .

 

Now once both your Bateta and Bhungras are ready the next step is to eat  . You pick up a pipe and pick a piece of potato with it’s end , take a bite , and so on ! You get the crunch from the Bhungra and the spice from Bateta. The first time I ate these I was so amused but as I went on I simply loved this combination . Go ahead try it and do let me know how you like it . For the authentic version make the bateta spicy , but if you can’t take too much spice  cut it down , you are sure to enjoy this street food from Rajkot.

Fried bhungras

Lasooniya Bateta

Ingredients

5-6 potatoes
4-5 tbsp garlic paste
2 onions
4-5 tomatoes
4 tbsp oil
1/2 tsp cumin seeds
1/2 tsp coriander powder
4 tsp red chilly powder
1 tsp cumin powder
Salt to taste

 

Method

Boil the potatoes , peel and cut into cubes.
Make a fine paste of onions.
Purée the tomatoes.
Heat oil in a pan.
Add cumin seeds, let crackle.
Add garlic paste , sauté on medium flame for two minutes .
Add onion paste , continue to sauté on medium flame . Sauté till there is no moisture . The onion will be still white.
Add turmeric powder and stir for a minute.
Add the tomato purée and let cook till oil separates.
Add red chilly powder, coriander powder , cumin powder .
Let the spices cook for a minute or two .
Add the cubes potatoes and salt .
Cook on medium flame , cover the potatoes for 4-5 minutes . Make sure you stir them in between .
Cover and keep aside for at least a couple of hours before serving . This will help in infusing the flavors .
Serve garnished with coriander.

  1. Height of deliciousness Vaishali! Your description of the dish and the pics are making me drool early in the morning! I am bookmarking the whole series and try it out. And I have tasted another chaat with these fryums, where they are stuffed with grated carrots, onions and spicy roasted peanuts.

  2. Another new chaat recipe to me. I remember those rice pipes were quite popular in my school days and we use to call it as “Appala poo” in tamil. Garlic flavored potatoes with those rice pipes sounds delicious and the entire setup in the tray looks exactly like the tray from the street vendors,Vaishali 🙂

    These bhungras are commonly available in south India and there is a different kind of chaat made with these in Bangalore.

  8. We get Bhungra as kulal appalam and it is kid’s fav here. We used to insert one for each finger and loved to bite from them. This version of having the bhungra with spicy garlicky potatoes sounds so delicious..

  13. Wow, this is simply delicious. I second Gayathri. I remember doing the same. Putting those on all the fingers, that too different colors and paal ice in the other and relishing them… Missing those summer fun. Stuffing these beauties with potatoes and condiments will definitely make this delicious. Food heaven I must say.
