
Baked Veggies & Pasta is a one-pot meal with veggies, pasta and white sauce. It is topped with cheese and baked to a perfect golden.
Our family is a great fan of Baked Dishes, and we make sure that they are full of nutrition. A baked dish with a creamy white sauce made with whole wheat flour, and veggies, some pasta and red sauce are one of the dishes that is almost a weekly affair. I keep varying with the vegetables so that the taste and the flavours change, but essentially most of my baked dishes have the following components –
Vegetables
Pasta
White sauce, preferably made with wheat flour
Red sauce (optional )
Herbs and seasonings
Cheese
I vary the sauces to make variations in the dish, which makes a huge difference in the taste. One can add or minus the onions and garlic in red sauce, similarly one can vary the white sauce or the Béchamel sauce, by replacing wheat flour instead of all-purpose flour. One can add some spinach or garlic. Also, we can vary the herbs, at times one can use oregano, chilly flakes or basil or just simple salt and pepper to make a great dish. Let your imagination run and you shall have a new dish every time.
This week I shall be posting three such dishes varying the sauces and pasta, which make excellent Savoury Baked Dinner Meals.

Baked Veggies & Pasta
Ingredients
11/2 cup mixed vegetables, boiled
1/2 cup penne pasta, boiled
Cheese, grated
White Sauce
8 tablespoons butter
8 tablespoons all-purpose flour/wheat flour
4 cups milk
1/4 cup cheese + 1/2 cup
Salt to taste
Dash freshly ground black pepper
Method
White Sauce
Add butter to a pan.
As soon it melts add the flour.
Roast till the flour turns a little brown.
Gradually add milk and whisk constantly.
Add 1/4 cup cheese, let it cook for 2-3 minutes.
Add salt and freshly milled pepper.
Assembling the Dish
Grease an ovenproof dish.
Add the boiled veggies and the pasta to the white sauce.
Pour the sauce with veggies into the dish.
Grate and spread cheese over the pasta.
Bake in a preheated oven at 180 deg C for 20-25 minutes.
Serve hot with garlic toast.

You can spice up the dish by adding a variety of store-bought sauces like Tobasco or Pepper Sauce.

What an easy meal to prepare Vaishali, but so tasty and feeds a crowd without too much work! I love the fact that you can have a new take every time by tweaking the herbs and even the sauces.
