Beet root is a root with a beautiful color and lots of health benefits.It is interesting to know that originally, it was the beet greens that were consumed the sweet red beet root that most people think of as a “beet” today wasn’t cultivated until the era of ancient Rome.
These are delicious plus they lower your blood pressure , boost your stamina. Here in Gujarat the Beet nu Raito is very popular. it is a simple curd dish , but delicious and very soothing. It gives the curd a beautiful color , adding some green chilly gives you that mild zing that you will enjoy with the beet root sweetness.
I prepared this for the Gujrati Thali, but was unable to take individual pics, so I made it all over again.
Beet nu Raito
Serves : 2
1 cup beaten curd
1/4 cup beet root, finely grated
1 green chilly, pounded
1/4 tsp cumin powder
Pinch rock salt
Salt to taste
Add very little water to the whisked curd, to get the desired consistency of the raita.
Add all ingredients and mix well.
Garnish with mint and coriander leaves.
