Tamatar ka Chokha is a relish made with roasted tomatoes , onions and green chillies . Mustard oil is used to make this bharta , which gives this Bihari relish a very unique taste.
Tomatoes are roasted till the skin is charred and this lends a smoky flavor to the chokha . Raw onions , green chillies are added to these smoky tomatoes which are mashed with hands . A light drizzle of mustard oil is a must to give it the Bihari touch . This is a version where only tomatoes are roasted , thereafter no cooking is done , a version that I learnt from a chef in Bihar . The Tamatar ka Chokha reminds me so much of the salsa, it has the same basic ingredients and I wouldn’t hesitate to call it the Indian Salsa .
Tamatar ka Chokha is best served with Bihari Litti , which is a close cousin of Baati ,but this chokha is so delicious that you can enjoy it with parathas as well . In fact I don’t mind it along with my regular meals too . The raw onions and green chilly add a mild pungency and the mustard oil is what takes it to a different level .

Tamatar ka Chokha
Ingredients
2 tomatoes
1 onion
2 green chillies
1 tsp coriander leaves
1tbsp mustard oil
Salt to taste
Method
Roast the tomatoeson an open flame till well charred.
Let cool and remove the charred skin.
Crush the tomatoes with hands or use a potato masher.
add chopped onions, green chilly., coriander leaves, salt and finally mustard oil.
Mix well and serve.

Addition of mustard oil is an interesting touch. And you are right, very similar to the simple pico de galo.

I love few dishes from bihar, chokha is one of them, tamatar chokha with litti taste heavenly. I love raw mustard seed oil in chokha. thats where it taste great.
