Bakeathon is an annual event at Valli’s space where we have to post our bakes thrice a week . Every year I think of participating in this event but December is a very hectic month and I always opt out . With girls and kids coming for their annual vacation , I like to spend maximum time with them .
This year I had more than 15 bakes in my drafts and Valli knew about it , so told me to participate. And here I am . All these bakes were in my drafts since nearly 4-5 months . I had baked them for a friend who was travelling to US . Most of the bakes were done in big batches and we did three to four in one go .
For the very first day I have Chocolate Cornflakes Cookies . I have used all purpose flour in these cookies but you can replace it with whole wheat flour , they come out equally good and The crunch from the cornflakes was excellent .
And yes here are some more interesting cookies that you might like.

Chocolate Cornflakes Cookie
Ingredients
1/2 cup all purpose flour
1/2 cup sugar, powdered
2 tbsp cocoa powder
1 tsp instant coffee
1/4 tsp baking powder
1 tsp vanilla extract
1/4 cup unsalted butter
1 tbsp milk
1/2 cup crushed cornflakes
Method
Prepare a baking tray with parchment paper.
Preheat oven to 180 deg C.
Mix flour, cocoa, coffee and baking powder.
Beat butter and powdered sugar till light and creamy .
Add vanilla extract.
Add the flour mix to the beaten butter.
Add milk and form balls.
Roll on the crushed cornflakes and place them on parchment paper.
Make the rest of the cookies in the similar manner .
Bake for 18 – 20 minutes.
Let cool on a wire rack .
Store in a airtight container .

The cookies looks beautiful…chocolate with cornflakes is interesting and the coffee would have added a lovely flavour. Why am I not surprised that you had so many baked dishes in your draft folder? Hats off !

I always have cornflakes in my pantry, but never used them to make or bake anything, apart from having them in milk! Love those crunchy looking cookies and that too chocolate flavored! Yum… Glad to know that I am not alone in depending on the “magic folder” 😉
I can imagine how crunchy these cookies are as I have baked another version of this. But what I liked the most is you cup and saucer. So cute!!
