Today is the fourth day and We shall be cooking from a country with D and I chose Denmark. I remember Gayathri giving us a challenge where we had to bake a Danish Cake. This was one of the most delicious cakes that I have ever had. Also we all know about the fame of Danish pastries , so I decided on a cake.
A little about the cuisine and meals of this country.
There are three main meals in Denmark: breakfast and dinner are typically eaten at home, whereas lunch for practical reasons has to be eaten elsewhere and often consists of a packed lunch brought from home.
In the morning, most adults drink coffee or tea. Children and young people often eat milk products with cereals such as corn flakes, muesli or oatmeal.
Generally lunch is a cold meal consisting of slices of rye bread buttered and covered with for instance various kinds of sausage, sliced boiled egg or liver paste, a baked mixture of chopped pig’s.
The evening meal is called middag, because it used to be eaten in the middle of the day. It is eaten at home and most Danes make an effort to gather the family around a hot meal every evening.
Traditional Danish cuisine actually has a lot of spices in it , it’s even comparable with Asian cuisine. There is sometimes sweet and sour flavor combinations, with a bit of explosion on the tongue, but that explosion is not due to chillies but from mustard seed or horseradish.
Coming to the Danish Apple Cake , I looked up for a eggless Danish Cake and the search results were amazing. All I saw was the eggless Danish Dream cakes posted by our Bakers challenge.I found two recipes of the Danish Apple Cake. I immediately saved them and finally made one.
Danish Apple Cake
3/4 cup all purpose flour
1/2 tin condensed milk
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon powder
1/2 cup oil
1 tsp vanilla essence
1 apple cored and chopped
1-2 tsp milk or as required
Topping
1 tsp. brown sugar
1/2 tsp. cinnamon powder
1/4 cup chopped walnuts
1 tsp all purpose flour
Grease and dust 8” bake tin.
Sift flour, baking powder, soda, cinnamon powder together.
In a bowl beat condensed milk very well, add essence and mix well.
Add oil and beat.
Add flour gradually and gently beat.
Fold in chopped apples into the batter, add milk as required and mix.
Pour the batter in the greased tin and evenly spread the remaining apples. Then sprinkle the topping mixture on the apples.
Bake in a pre-heated oven at 150*C for 40 – 45 mins.
The cake was a simple bake but a delicious one. It was a little dense due to the apples, but it surely had a wonderful flavor . We all loved the cake.
While choosing my recipe I did not realize that I shall be posting it on 4th Sept..It happens to be Dad’s Birthday today!!..co incidentally I had posted a Coffee Orange Cake last year too..But from now on I shall make it a point to post one every year.

Apple cake if it is from Denmark or any other country is my favorite so tempting.

That Danish dream cake all of you posted has been on my mind for so long! This looks superb. I like fruit based cakes. This seems like a winner!
