When I got married I used to wonder at the dinner style of Gujrati’s . They normally eat only one snack at a time . If they make something like Dahi Wada they would just eat Dahi Wada , I being new to Gujrati culture could not understand this concept, but over the years I like this concept .
We follow this concept but perhaps twice a week . There are some dishes that are our favourite and our menu rotates around them . Steamed Dhoklas are a hot favourite of the family . They are steamed lentil cakes and full of protein . I have made umpteen versions of these and today I shall share yet another version .

Sandwich Dhokla
Ingredients
Tempering
2 tsp oil
1/2 tsp mustard seeds
1/2 tsp sesame seeds
Pinch asafoetida
Stuffing
2-3 potatoes , boiled and mashed
1/2 cup green peas, boiled
2 green chilly, finely chopped
Coriander leaves, finely chopped
Mint leaves, finely chopped
1 tbsp oil
1/2 tsp red chilly powder
1/2 tsp garam masala
1/4 tsp rock salt
1/2 tsp dry mango powder
1/2 tsp roasted cumin powder
Salt to taste
Method for Dhokla
Prepare the Dhoklas, following the above recipe,but while pouring the batter , pour a thin layer .
Once it has steamed let cool for a few minutes.
Using a spatula remove the whole dhokla cake .
Similarly make another cake .
Stuffing
Heat oil.
Add green chilly.
Mix all the spices and add to the oil.
Switch off the gas.
Since the oil would be still hot the spices will get roasted .
Add boiled mashed potatoes and boiled peas.
Switch on the gas.
Add coriander and mint leaves .
Sauté for a few minutes .
Keep aside .
Assembling the Sandwich
Heat a non stick grilling pan.
Place one cake and grill only one side.
Remove and keep aside .
Now place the other cake on the grill pan .
Spread the stuffing on this .
Now place the previously grilled cake , the grilled side up , thus making a sandwich .
Temper the Dhokla Sandwich by heating oil and then adding asafoetida ,mustard and sesame seeds .
Cut into wedges and serve .

Yummy ! Didn’t know potato was used for stuffing ; when I saw the recipe name, I was expecting paneer or even safed dhokla to be steamed along with the yellow version .. this grilling is new to me 🙂
A different way to serve dhokla… definitely unique and filling at the same time and yes we Gujjus love our snacks and can make a feast out of them 🙂
