Dry Fruit aur Aatey ke Ladoo is an Indian sweet that is made with wheat flour and a mix of nuts and dried fruits.
For the last two days, I have been posting different varieties of ladoos where I posted Poha Ladoos, which are made of beaten rice and Digestive Biscuit Ladoos made of Biscuits and cocoa powder. Today I have yet another variation of Ladoos. These are made of Aata which is wheat flour.
Wheat Flour is an Indian staple and we use it to make our everyday breads like chapati or parathas. It gives energy and makes our food wholesome. This wheat flour is used in a number of recipes besides roti and Paratha. It is a versatile ingredient that can be used in savoury as well as sweets. It can be milled superfine or coarse.
Today we shall make an Indian sweet called Ladoo. A basic ladoo needs just three ingredients, which are ghee, flour and sugar, but when we make a variation then we need some other ingredients depending on the variety of the ladoo.
For today’s ladoo the flour has to be roasted till the flour turns a beautiful golden. It shall release a wonderful aroma. After roasting we need to bring it to room temperature and then add powdered nuts, raisins and Boora Khand ( variety of powdered sugar ), mix everything and then form the ladoos. At times the mix is difficult to bind, if so add warm ghee in small portions and bind the ladoos.
We have added Boora Khand which is a grainy kind of sugar made from sugar cane, it is easily available in the market. However, if you cannot source it you could try making it at home by following this video or simply use homemade coarsely powdered sugar.
I have powdered the nuts as kids pick them out, but you can coarsely grind them or use either chopped or whole. The raisins can be lightly fried in ghee as their flavour enhances, but that is again optional. Cardamom gives the ladoos a delicious flavour as well as aroma, so please do not miss this ingredient.

Dry Fruit aur Aatey ke Ladoo
Ingredients
11/2 cups wheat flour
11/2 cups Boora khand ( powdered sugar)
3/4 cup ghee
1/2 cup powdered nuts
1/4 cup raisins
1 tsp cardamom powder
Method
Heat ghee.
Add the wheat flour and roast on slow heat.
Roast the flour till it lends a wonderful aroma and has turned to a nice pink.
Remove from fire and let cool for a while.
When the flour is still slightly warm add the powdered nuts, raisins, cardamom powder and sugar.
Mix well.
Pinch out balls and make ladoos of the desired size.

I remember my grandma making these as a quick after school snack a few times. Between the three of us, these hardly lasted a few seconds . Good to see your recipe, something I can try if I feel like.

Addition of nuts is a nice idea. When growing up my grand mother used to roast wheat floor and add sugar to it. Sometimes even ghee and eat it as it is. Shaping in to. laddu is easy to hold when eating. Dry fruit aatey laddu made me nostalgic.
Wheat flour ladoo with nuts is so healthy and nutritious snack. Presentation is too good and feels to pick from the screen and eat.
