Eggless Double Chocolate Chip Cookies are crunchy chocolate cookies which are studded with chocolate chips.
We have always been fond of the Subway monster cookie, which is not only large in size but also super monstrous on taste. With the present situation, all the favourite foods which were ordered are being made at home. Juhi tried these cookies and we instantly loved them. It was these cookies which inspired her to take orders.
The cookies are chewy, fudgy and gooey. The studded chocolate chips and some sprinkled sea salt take these cookies to another level. The brown sugar makes them dense and chewy as it absorbs the moisture content. One can use white sugar too, it shall make the cookies crisp. Well, for these I surely preferred brown sugar.
The next important ingredient for these cookies is the quality of chocolate chips that we use. For us here in India, I like to use Calibu, it has a good chocolate flavour. We must remember that the chips should not be bland and chalky.
These cookies make a perfect edible gift and we baked quite a few of these cookies. They were a total hit and we got quite a few orders. We packed them in a handcrafted box. It is interesting to know how the new generation likes to give gifts to their fiancé. The girl wanted some interesting thought on the box, hence you see – Grow Old with me! The cookies and the box as well were appreciated.
Taking orders for baked goodies is interesting, as we fulfil our passion for baking and at the same time need not indulge in too many of these sweet goodies.
Eggless Double Chocolate Cookies
Ingredients
½ cup salted butter,(room temperature)
1 cup brown sugar
1 tbsp egg replacer powder + 3 tbsp water
1 cup all-purpose flour
¼ cup cocoa powder
1 tbsp cornflour
½ tsp baking soda
½ cup chocolate chips
Sea salt, to sprinkle
Method
Using an electric mixer, beat butter until light and fluffy.
Add the brown sugar and beat it with the butter.
Beat in the egg replacer. Add vanilla.
In a separate bowl, sift together flour, cocoa powder, baking soda, corn starch.
Add the dry ingredients to the butter mixture and mix until blended.
Add chocolate chips. Using a spatula or a whisk, carefully mix them into the batter.
Scoop out the dough into balls of equal sizes on a baking tray lined with baking sheet.
Press them lightly with your fingers.
Refrigerate for 30 minutes.
Preheat the oven to 170C.
Bake for about 12-15 minutes or until the edges become golden brown.
After taking them out of the oven, sprinkle with sea salt and let them rest on the baking tray for at least 10 minutes.
