Fada ni Lapsi is a porridge which is cooked with broken wheat along with pure ghee , sugar / jaggery and cardamom . This comes from a Gujarati kitchen .
Wheat has an important role in a Gujju kitchen . It is used in various forms , starting from its original whole wheat berries to the fine milled flour which is used for rotis . it has so many more stages , like wheat bran , cracked wheat and then it can be milled to a coarse flour which is used for Bakhris and Ladoos . Semolina and Maida too are refined forms of wheat .
Wheat is cleaned and husked and then processed to the required size . This broken wheat is used for porridge or Lapsi . When we say Fada ni Lapsi , Broken wheat is referred as Fada .
Fada ni Lapsi can either be dry or semi soft . It is purely depends upon your liking . Ghee enhances the flavor but if you are a vegan don’t feel disheartened , you can still enjoy it by using any cooking oil . You have the option of jaggery or sugar to sweeten it , of course you can use stevia too . Cardamom enhances the flavor and if you like nuts , do add them . It’s one of the most nutritious breakfast and excellent for lactating mothers . Go ahead and try , you will surely love it . Fada ni Lapsi
Ingredients
3 tbsp ghee
1/2 cup broken wheat
1/2 cup sugar
Large pinch cardamom powder
Nuts to garnish
Method
Heat ghee preferably in a nonstick pan .
Add broken wheat and roast , stirring continuously till it turns golden .
Add 2 cups warm water and mix well . Let the water boil , then simmer the gas and let the wheat cook for about 15 minutes or till done . Stir at regular intervals .
Add the sugar and cardamom powder . Mix well , simmer and cook for another 5-7 minutes or till ghee separates .
Serve garnished with nuts .

Lovely lapsi. Your series theme is quite interesting and involves lot of brain storming to come up with recipes in an alphabetical order, I bet. I missed your posts last month and will go through them at leisure. Just today I came across a plain version of this recipe in a TV Show and it was served with a moong dish.
I make this with the finer wheat rava but this cracked wheat version sounds just as delicious. Sweets are always welcome here 🙂
