Day 2 and I have a Fruit Nut and Seed Salad for the theme Take out Menu.

While ordering food from out , I always like to order salads , a new variety every time . For me no meal is complete without a salad . Even the everyday meal has to have salad , it might not be a very exclusive one , just some onions , tomatoes and cucumbers , but definitely a must .

So when we call for a take out I order a good new salad . This salad that I made has a bit of everything , cabbage , onions, carrot , cucumbers , nuts and seeds . The nuts provide a lovely crunch to the salad whereas the fruit give you that mild sweetness, which you are sure to love. The dressing is simple as I do not prefer heavy or time consuming dressings. Basic salt and pepper with some lemon is all time favourite but olive oil and honey change the flavours drastically and the salad becomes a gourmet salad .

Fruit Nut and Seed Salad with lemon and honey dressing

Ingredients

1/2 cup cabbage , chopped
1/4 cup bell peppers ( red, yellow , green )
1/4 cup carrot , grated
1/4 cup onions , finely chopped
1/4 cup pumpkin and sunflower seeds
Few raisins and pecans

Dressing

2 tbsp olive oil
1 tbsp honey
1 tbsp lemon juice
Salt and pepper to taste

Dressing

Put all dressing ingredients into a jar and shake well .

Method

Mix all ingredients and add the dressing .Mix well and serve chilled.

Fruit Nut and Seed Salad is a delicious salad with a simple dressing but the crunchy walnuts and the sweet raisin take the salad to a different level.

  2. I love the colorful mixes you present every time and this salad is no different. Nuts add a nice crunch to salads , the simple dressing of olive oil and lemon juice adds so much of flavor without making it too heavy.

  3. Vaishali, you have such fantastic list of salads that I always want to try and here is yet another one!..As I have said many times, salads is not so big on my list, so getting a salad take away sounds so new to me, hehehehe..
