The next in Protein Rich Salads is the Fruity Yogurt Salad . This is a simple salad but provides you a good amount of protein .

For today’s salad I have used Greek Yogurt , and flavoured it with Vanilla . I used some honey to sweeten it , fresh fruits , nuts and seeds for the added flavour and protein . This is a very simple salad , but tastes heavenly .

Greek yogurt, which has the whey strained out, is thick and creamy compared to regular yogurt. It also provides a significant source of protein for a relatively small portion , adding fresh fruits to it , gives them added nutrients .Seeds and nuts add crunch plus protein.

One can always vary the combination of fruits , nuts and seeds. Choose from sesame, sunflower, pumpkin or poppy seeds – as they’re all high in protein and healthy fats. Choose your favourite nuts from almonds , walnuts or pistachios , they are all Protein Rich .Apart from salads, you can also add them to raita, cereal or homemade granola.

There is no recipe to this salad, and I was rather hesitant to post it , but I wanted all my salads to feature different kinds of ingredients that would give us a Protein Rich Salad. Anyways , let me tell you what all I have used.

Fruit & Nut Yogurt Salad

Ingredients

500 gms yogurt
1 tbsp honey
Few drops vanilla essence
Mango
Cherry
Pecans
Pumpkin seeds
Melon seeds

Method

Take a strainer and place it over a bowl.
Put the yogurt into the strainer and place it in the refrigerator for about six hours.
You will get a tick chunk of curd , discard the water from this curd, or use it for binding dough.
Remove the thick chunk in a bowl, add honey and vanilla essence and whisk till smooth.
If you find the yogurt is very thick add a little milk to get it to the consistency you want.
Alternatively you can get Vanilla flavored Greek yogurt.
Place them in serving bowls and top with your favorite fruits, nuts and seeds.
I used mango, cherry , walnuts , pumpkin seeds and melon seeds.
Serve chilled.
