Gajar ka Paratha is an Indian whole wheat flatbread made with grated carrots and spices. The flatbread is quick to make and makes a wonderful breakfast.
This week I have picked the theme ’ Back to School ’. Well if I had to post what I had back in school it would be very different from today’s scene. I notice schools are very particular as to what the children get in their lunch box. They are not allowed bread, chips, or any kind of junk! As a result, moms are forever looking for healthy and nutritious recipes. The recipes should be simple, quick, and healthy.
For today I have one such recipe, which will please all mothers as well as the kids. The Gajar ka Paratha is simple, quick, and healthy. It is an all in one paratha, where you mix everything along with the flour and make the flatbread. Gajjar/ carrot is now available throughout the year, though the red Delhi carrots are only seen in winters, we do get the orange ones throughout the year.
Gajar / carrots are a root that is crunchy, tasty, and highly nutritious. Carrots are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants. They have great health benefits and should be incorporated into our kid’s diet. So let’s check this simple recipe with carrots and whole wheat flour. The parathas are loved by kids and while packing these you can pack some pickle or chutney too. And yes you could also check the Beetroot Parathas which I posted yesterday, they too make an excellent snack for school.
Gajar ka Paratha
Ingredients
2 cups wheat flour
1 cup grated carrots
1 tsp carom seeds
1 tsp green chilly paste
1/2 tsp ginger paste
2 tbsp oil
2 tbsp coriander leaves
Salt to taste
Enough water to make the dough
Method
Mix the wheat flour, grated carrots, carom seeds, chilly paste, ginger paste, oil, coriander leaves, and salt.
Mix everything very well with hands, so that the moisture from the carrots is absorbed by the flour.
Now bind the dough with water.
Make a semi-soft dough, cover, and leave it to rest for 7-10 minutes.
Pinch out a lemon sized ball and roll into a round disc.
Heat a griddle and cook the paratha.
Flip over and cook the other side too.
Apply oil or ghee on both sides to make finish the Paratha.
Serve hot with carrot raita or Boondi Raita.

Carrot Paratha looks so soft and delicious. Would love to have with some spicy pickle.
These are nutritious and yummy parathas, for all ages. I have never tried adding ginger – chili paste to carrot parathas but will do next time.
