Gajjar Halwa Spring Rolls

Gajjar Halwa Spring Rolls is a fusion snack where we make rolls out of samosa patti and then fill them with Gajjar Halwa .

During winters my fridge always has Gajjar Halwa , It’s a delicious Indian sweet which is a instant hit with adults and kids . I am personally very fond of it . Basically carrots are simmered in milk and once cooked sugar and cardamom are added along with some ghee . Nuts are optional , but definitely enhance the taste . The Halwa has a good shelf life if placed in the refrigerator . One can freeze it as well . The same Halwa can also be made without milk.

I always try to use the Halwa with various combos . Halwa with vanilla ice cream is one of the most common ones , but really delicious . Using the same combo of Halwa and Ice cream , yesterday’s Gajjar Halwa cups are a big time party pleaser. Yet another combo that I made was Halwa Terrine with Gulab Jamun and served for BM #25 Meet . Wonder if friends remember it ! It is one dessert that I have made for many parties and every one goes ga ga over it .

Coming to the Gajjar Halwa Spring Rolls , they are simple if you have the Halwa ready . I have used ready made samosa patti , but these can be made at home and they work well too . Now what we need is to create a mould for these rolls , so we need to take a thick quality aluminium foil . Cut out a rectangular piece , double it and make a roll , just the size you need . Once your foil rolls are ready , you have to wrap the patti or sheet around it and finally seal it. You can fry these or even bake them . It was my first time so I fried them and the rolls turned out super crunchy .

Once the rolls are ready , you can store them for a couple of days . Serve them as and when required . I filled Halwa and then dipped the edges into powdered Gulab Badaam Powder . Finally I drizzled some condensed milk . We can make umpteen variations with these rolls . Sweet as well as savoury .

Ingredients

1 cup Gajjar halwa
8-10 samosa sheets
1/4 cup Gulab Badaam Powder/ milk masala

Method

Take a foil paper sheet , about 8”. Double the sheet and roll it into a cylindrical shape . So we shall have a tube of 4” and a diameter of 1”.
Similarly prepare 8-10 more such tubes .
Now take two samosa Pattis and applying the slurry at the end stick to make this sheet long .
Take this sheet and roll it over the foil tube .
Prepare all rolls like this .
Heat ghee or oil and deep fry these rolls , till they turn golden .
Remove them on a paper towel .
Now just slide off the foil tubes .
Take a spoon and fill halwa from both sides . It’s easier to fill from both sides .
Dip the edges into the Gulab Badaam Powder or Milk Masala .
Drizzle condensed milk .
Serve garnished with pistachios and rose petals .
