Garadu ki Chat is a deep fried chat made from yam . The chaat is a typical winter street food from Indore .
Yes, today we are in Madhya Pradesh to Explore the Flavours of Street Food. With the alphabet G I have Garadu Chat . Garadu is a type of yam. I had never seen or heard about it . It was my dil who got it from Indore and made it . This is a famous chat from Indore and is available only in winters .
The yam needs to be peeled and boiled first and then chopped into bite sized pieces . It is then fried till crisp . Garadu masala , a special spice and lemon are drizzled over this and we are ready for a tongue tickling hot and spicy chat .
We have a special spice Garadu Masala which is used to give it that zing . The masala is like chaat masala and after adding this masala one doesn’t need any other spice except salt. We got the masala from Indore but there are a couple of online recipes for this masala and one can definitely give it a try .
For those who can’t lay hands on this particular yam , can definitely give it a try with a different variety of yam , I am sure it will taste equally delicious .
Some simple and quick similar chaats –
G – Garudu Chaat – Street food from Indore
Ingredients
700 – 800 gms garadu
2 tbsp garadu masala
Salt to taste
Lemon juice
Oil for deep frying
Method
Trim off the ends of garadu taking off the narrow tapering ends and use only the middle section. Grease a knife and remove peel.
Cut garadu into large chunks.
Boil seven to eight cups of water in a deep pan.
Add garadu chunks and boil till just done.
Remove and drain into a colander.
Let cool.
Cut into bite sized cubes.
Deep fry till golden and crisp.
Sprinkle jiralu masala,salt, lemon juice .
Mix well.
Garnish with coriander leaves.

Similar to the shakkarkandi chat but with that special masala must hv tasted so different . Is this the purple yam we use for undhiyoo ?
No , Kalyani it is not the purple yam , it is a little yellowish in color and tastes different than the other yams . Unfortunately It is available only in MP .

wow this is an amazing chaat di , So happy to see the real garadu version the masala does add some zing to the chaat , it is all about the masala and the chaat would taste amazing isn’t it , I made use of yucca and ratalu which is easily available here .. When I was reading about MP, I read about this chaat as well. Never knew Gurudu is hard to source. Kudos to you DIL for picking it up. Great share.

I had google to check out how garadu looks like. This simple chaat is tempting. Will have to check what garadu masala ingredients are. By the way love those cocktail sticks.
