Hare Matar ki Sookhi Sabzi is a dry side dish made with farm fresh green peas . The fresh peas are boiled and tossed in very flavor ful spices , making the side dish very delicious .
Hare Matar ki Sookhi Sabzi is quick to prepare , after boiling , simply toss the peas in spices . Make sure you do not cover the pan while boiling , the colour of the peas will change . Also one has to roast the spices in warm ghee, else they will burn . Rajma Masala lends a excellent flavour to these , so does Pav Bhaji Masala and Garam Masala .
Winters is the time for those fresh green peas . These peas are a favourite in both mom’s family and my in laws family . We love them in the form of Paalak Matar ki Khichadi , Matar Paneer , Matar ka Paratha or simply tossed ! Today’s Hare Matar ki Sookhi Sabzi has been picked from Rajasthani Cuisine . This was one of the dishes served in Rajasthani section of a wedding that I recently attended .
Dad was very fond of peas and would get in bulk . It was on one of our train trip to Mumbai , he got two 5 kg sacks and throughout the journey we were laughing and peeling the peas ! Oh yes , we were all done by the time we reached Mumbai . This is one incident that I can never forget – my memories with Winter peas and Dad ! Anyways let get to Hare Matar ki Sookhi Sabzi , which is my Day 1 post for the A to Z monthly series where I am posting with ‘H’ today . I have chosen the theme Pick one State and Cook Three .
Hare Mattar ki Sookhi Sabzi
Ingredients
250 gms fresh green peas
1 tbsp ghee
1/2 tsp cumin-seeds
2 whole red chillies
1” ginger juilliene
1/4 tsp coriander powder
1/8 tsp red chilly powder
1/8 tsp garam masala / Rajma Masala Salt to taste
Method
Boil the green peas with salt.
Heat a pan , add ghee.
Add cumin seeds , let crackle .
Add whole red chillies and ginger juilliene .
Switch off the flame.
Add all the spices and sauté in ghee for a minute .
Add boiled green peas and return back to flame .Toss for a minute or two , serve hot with chapati or paratha .

Such a simple, yet so flavorful and delicious recipe this is. That platter with roti and subzi looks so homey and inviting.
