Ice Dabeli is a chilled Indian burger which has a sweet and spicy taste . It is laced with whipped yogurt ,flavorful chutneys and has a amazing crunch of peanuts and pomegranates .
While Exploring the Falvors of Kutch Street Food I heard of Ice Dabeli . The name intrigued me and I really wanted to know what was Ice Dabeli and why was it called so ?
Gandhidham is a small town in Kutch my cousins took me to Binarif , a famous Dabeli shop . I have spoken about this place earlier in my travel post to Kutch . Binarif is a crowded joint where they sell not only Dabeli but a variety of chats . I was keen to know about Ice Dabeli and asked the vendor to go slow while making it . The procedure to make Dabeli is same as Dabeli , but Ice Dabeli is topped with very chilled curd and chilled chutneys and hence the name Ice Dabeli ! This also reminds me of the Desi Burger Chat, which is another version of burger with curd.
Dabeli has a sweet, sour and spicy flavor and this flavor is further enhanced by the chilled curd and the chutneys . The sweet chutney and the garlic chutney make it so desirable . The nylon sev and the peanuts give it an awesome crunch . Pomegranate pearls subdue the hint of chilly that you feel from the garlic chutney and lastly it is garnished with rose petals . Heavenly ! Trust me while the Ice Dabeli was being made , I was drooling , I just couldn’t wait to bite in this big Indian chilled burger ! The first bite was like a total burst of flavors , seriously you have to experience this .
It is one rare street food so go ahead try it for yourself .
Ice Dabeli / Chilled Burger
Ingredients
2 dabeli buns
Sweet tamarind chutney
Green Chutney
Whipped curd
Garlic chutney
Nylon sev
Pomegranate pearls
Coriander leaves
Rose petals
Stuffing
1 1/2 tbsp dabeli masala
2 tbsp + 2 tbsp sweet tamarind chutney
1 1/2 cups boiled potatoes, mashed
Salt to taste
4 tsp garlic chutney
4 tsp onions, finely chopped
2 tbsp roasted masala peanuts
Butter for roasting
Method
Stuffing
Mix the dabeli masala and 2 tbsp tamarind chutney well.
Heat the oil in a non-stick pan, add the prepared dabeli masala mixture, mix well and cook on a medium flame for a minute.
Add the mashed potatoes, coriander leaves and salt.
Cook for a 3-4 minutes.
Assembling the Dabeli
Take a bun and either cut it into two or make a slit in it.
Apply 2 tsp of garlic chutney and 1 tbsp of tamarind chutney evenly on the inner sides of the bun.
Stuff with 3-4 tbsp of the stuffing and top with 1 tsp of onions and 1 tsp of peanuts.
Cook each dabeli on a hot griddle for a minute using a little butter.
Pour 2-3 tsp freshly whipped chilled curd over the prepared dabeli.
Drizzle sweet tamarind chutney , green chutney and garlic chutney as per taste.
Sprinkle nylon sev, masala peanuts , pomegranate pearls , coriander leaves and finally rose petals.

OMG! this definitely prompts me to say ‘sone pe suhaaga’. Here I am still unable to make the simple version of dabeli and you are making such exotic versions of Dabeli. Not fair at all:).

Lipsmacking version of dabeli with those chilled chutneys. Simply love it and those rose petals as a garnish is amazing.
