Khatta, means sour.So the basic flavor of the dish is slightly on the sour side, which if you don’t want can be mellowed..In the valley they make meat also in the same way.

½ tsp…………… ginger, finely chopped
1/2 tsp…………. garlic, finely chopped
2……………………onions, paste
2tbsp………….. radish , grated
2tbsp………….. carrot, grated
2tbsp………….. pumpkin, grated

¼ tsp………….. garam masala
¼ tsp…………… turmeric pwd
1 tsp……………. kitchen king masala
1tsp……………. channa masala
1 tsp …………….mango pwd
Salt to taste

This loss so much like the typical kala Chana of Himachali dhabas. This reminds me of innumerable vacations tsken in the hills and the valley as a kid. I just got to try this 🙂

Looks like the Kangra valley dishes have grated pumpkin in many of their dishes, even yesterday's dal had it. Looks awesome. I'm loving these dishes as they are totally new to me.
