Kesari Phirni with Mango & Nuts is a traditional dessert of Punjab with a slight twist. Phirni is a milk-based rice pudding. It is creamy, yet light.
Phirni is a simply delicious dessert from North India and gets done in a jiffy. All you need is soaked ground rice, milk and sugar. Once your basic Phirni is ready, you could flavour it with Kesar, cardamom, nuts or even fruit pieces.
Kesari Phirni is flavoured with Kesar / saffron. Saffron is exotic and most Indian sweets are enhanced with it. It not only adds a hue to it but also lends it a beautiful flavour and aroma. So the Phirni is flavoured with Kesar and cardamom, after chilling it, pour into individual cups. Add some mango cubes and drizzle Jannat e Gulab! Finish with some nuts and rose petals and you are ready to serve.
This Indian Trifle was a total hit and my guests loved it so much that they even carried it along with them!
Kesari Phirni with Mango and Nuts
Ingredients
500 ml milk ( full fat )
1/4 cup rice
Sugar to taste
1/4 tsp cardamom powder
Few strands saffron
3-4 mangoes, chopped in cubes
Almonds and Pistachios, chopped
Rose syrup
Method
Wash and soak the rice for an hour.
Grind the rice to a fine paste.
Boil the milk, after it boils add cardamom powder and sugar.
Crush the saffron in a mortar and pestle.
Add to the milk.
Now simmer the gas and gradually add the rice paste.
Keep stirring continuously to avoid lumps.
As soon as the milk becomes thick, remove from fire.
Let cool, while it is cooling make sure you stir it at regular intervals to avoid the formation of the skin.
Once cool pour the kheer into individual bowls.
Cover with a cling film and refrigerate.
Before serving add mango cubes, drizzle some rose syrup and finally sprinkle some chopped almonds and pistachios.
