Koshimbir is another name for a salad .This Koshimbir belongs to Udupi Cuisine . The salad is high in protein and has a mix of raw lentils and veggies .
The lentil used in this Koshimbir is yellow moong daal which needs to be soaked for a few hours . The lentil should be soft yet crunchy . While making raw lentil salads one should make sure that you wash the lentils well a couple of times so that there is no raw after flavor . If it has been washed well and then soaked you just have to drain the excess water .
Once you drain the water leave it in the sieve for a while so that there’s no moisture . You can add the rest of the ingredients and seasonings . Chill the salad if you wish too , but remember cling wrap the bowl before putting it in the refrigerator .
I had prepared this Koshimbir for the Protein Rich Udupi Thali and we had enjoyed it thoroughly and my sincere thanks to PJ for helping me with this Thali .

Koshimbir
Ingredients
1/4 cup moong daal
1 cucumber , peeled and chopped
1 carrot , grated
1 tbsp raw mango , finely chopped
1 green chilly, chopped
1/4 tsp ginger , grated
1/2 tsp cumin powder
Lemon juice to taste
Salt to taste
Coriander leaves
Method
Wash the moong daal and soak till the daal is soft , yet has a crunch .
Mix in all the ingredients , adding salt and lemon juice too .
Mix well and garnish with coriander leaves.

This kosambari is one of my favorite recipes. The lentils blend so well with the other raw vegetables. The thali looks amazing!

I’m a bit skeptical to eating raw pulses. Could we steam pulses to remove its raw taste? You always amaze with your elaborated thalis.
Ritu, you could if you are so hesitant, but trust me give it a try and I can assure you that it does not give a raw taste, just follow the tips.
Looks very tempting. We make the salad in the same way except the addition of raw mango.
