One of my favourite greens is Fenugreek , Methi as we call it . Normally we make two types of Methi , both with potatoes .it is the dry Methi Aaloo which is a family favourite . We even make Methi Aloo parathas where we stuff the prepared methi . Since I have given up on wheat , I started missing my paratha.
When Valli came up with the theme of whole Grains , I decided to work with Methi and Jowar .I made the same Methi Aaloo that I use for the stuffing of Methi Aaloo Paratha. I added jowar flour to the prepared stuffing and made a dough for parathas. So instead of stuffing and making parathas , the flour was incorporated into the greens. Try and use very little flour so that you have more veggie than the flour. These parathas turn out extremely soft . My Day 3 post under Whole Grains.
I do not crave to eat those stuffed parathas anymore , these parathas are equally delicious .
Methi Aaloo Parathas with Jowar Flour
Ingredients
1 recipe Methi Aloo stuffing
1/2 cup Jowar flour
Method
Add jowar flour to the prepared Methi Aloo and bind dough.
Pinch out balls and roll them into discs.
Cook on a griddle till brown spots appear.
Flip and cook the other side too.
You could apply oil on both sides and fry the parathas to make them crisp .
I did not fry the parathas in oil.

Methi Aaloo Paratha with Jowar Flour

I feel terrible that even though I have all these ingredients in the pantry, I was thinking of all exotic dishes to make with whole grain and in the process skipped doing that theme..these are such excellent ideas!
