Mocha Cornflakes Cookies

Mocha Cornflakes Cookies are cookies made with chocolate – coffee flavor . The cookies are crunchy as they are coated with cornflakes .

When it comes to a mid morning snack cookies work very well , paired with a cup of coffee or tea they pep you up for a couple of hours till you have your lunch . To be frank I am no cookie lover and neither do I drink tea or coffee , but yes this is what most people prefer as their mid morning snack . I will not look far , my younger daughter is a great tea fan and loves it around eleven with a nice crunchy cookie . So here I am with a Mocha Cornflakes Cookie with some black tea for the theme Elevenses . This is my Day 3 post , the previous two days I posted Home made Namkeen and Nimbu Paani .

These cookies taste amazing and the flavour is awesome , they are bittersweet cookies where you enjoy both chocolate as well as coffee flavours . The cookie is coated with cornflakes which gives them a super crunch , besides that rustic look . I have made similar cookies with chocolate flavour , but Mocha is a flavour which is so lingering and you surely cannot stop at one !

Mocha Cornflakes Cookies

Mocha Cornflakes Cookies

Ingredients

1/2 cup APF
1/2 cup sugar, powdered
1 1/2 tbsp cocoa powder
1 1/2 tsp coffee powder
1 /4 tsp baking powder
1 tsp vanilla essence
1/4 cup butter , room temperature
1 tbsp milk
1/2 cup cornflakes , crushed

Method

Pre-heat oven to 180 C/ 350 F,.
Take a bowl mix flour, cocoa, coffee, baking powder and set aside.
In another bowl mix butter and powdered sugar , beat until light and creamy.
Add vanilla extract and combine well.
Prepare a baking tray with parchment/ butter paper and set aside.
Add the flour mixture to the creamed butter and mix well.
Add milk to combine and form the dough into balls.
Using a 1 tbsp measuring spoon form balls and roll into the crushed cornflakes .
Place on the parchment tray and bake in center of oven for 18-20 minutes .
Remove the cookies and let cool on a wire rack.
Store in an airtight container .

  1. These cookies sound very flavorful. Though I am not a cookie fan, I am sure my kids overlook the addition of coffee powder and take to these cookies.

  2. The idea of coating the cookies with corn flakes is brilliant Vaishali. It would add a nice crunch factor to the cookie. The mocha flavour is one of my fav and I would love these with a cup of hot coffee.
