
Nuts & Seeds Ladoo | Vegan Gluten-Free Ladoo is a delectable homemade instant sweet. It is healthy, vegan gluten-free, and instant.
This week’s Blogging Marathon theme is Healthy Snacks and this ladoo is just perfect for the theme. Melon Seeds are a powerhouse of nutrients. They are an excellent source of calcium, folic acid, magnesium, zinc, and protein. Sesame seeds are rich in protein, vitamins, minerals, and antioxidants. They lend a nutty flavor. Almonds provide good dietary fiber and are rich in protein and vitamin E. Combining all this goodness with jaggery the Nuts and Seeds Ladoo is a Health Bomb!
This ladoo is perfect for festivals, during winter, in kids’ snack boxes, or even after a workout. The vegan, gluten-free ladoo is a hit in our house. I have adapted this recipe from The Sizzling Tastebuds by Kalyani. Try them and I am sure you will love them.
Ingredients for Nuts & Seeds Ladoo | Vegan Gluten-Free Ladoo
Muskmelon Seeds: They are also called Charmagaz. Always buy fresh organic melon seeds. They tend to get bitter if old.
Sesame Seeds: These tiny seeds are rich in oil and very nutty. I have used white sesame seeds, but you can use black sesame for a variation.
Almonds: Use good quality almonds, roast them lightly, and grind them. Alternatively use Almond Flour.
Jaggery: I have used grated organic jaggery as it’s moist, and combines the ingredients very well.
Cardamom Powder: It lends a wonderful aroma and flavor to these ladoos. Please don’t skip.
Pistachios: I have used them to garnish, so either grind and make a powder or chop them.. You can also garnish with other nuts.

How to make Nuts & Seeds Ladoo | Vegan Gluten-Free Ladoo
Lightly roast muskmelon seeds, sesame seeds, and almonds. Roast them separately and make sure they are just toasted.
Remove and let them come to room temperature.
Once cool first grind seeds in short bursts. This should not take more than 2-3 seconds.
Next grind the almonds, again grind them in short bursts.
Pulse them else they will clump together.
Add cardamom powder and grated jaggery and pulse a couple of times, till everything comes together.
Check for sweetness, if required add more jaggery and pulse again.
Remove on a plate, pinch out small balls, and shape them into ladoos.
Garnish with pistachio powder.
Store in an airtight container.

Storage Suggestions
The ladoo is so delicious that it gets over as soon as it is made, however, you can store them.
Store the ladoos in an airtight container for 10-15 days, and keep them refrigerated.

- If the mix is dry, you might need to add some ghee or milk to bind the ladoo. Use almond milk for the vegan version.

Surely a power booster . Must make these for my after gym workout. Vegan,gluten free ladoos , I am sure we can make these sugar free too by adding dates and figs.
