Ooty Varky is a crisp fried or baked snack from the beautiful hill station Ooty . This is a Tamilnadu Special .
September Mega Marathon with the theme Sweets and Snacks has been an interesting journey , where I was aware of all the snacks I made . I had tasted all of them , except for this Ooty Varky . I have been to Ooty , a beautiful hill station in Tamilnadu , but never knew they had this special snack there .
This snack took a back seat and was the last one to be made , so much so that my friends were shocked that I had not completed the marathon till almost mid third week !
Well Gayathri had tried a baked version and shared with us long back , but Harini and Namrata spoke about the fried version ! I found it simpler and went ahead with it .
According to wiki , both fried and baked are popular , but when I checked the videos they only showed the baked . So I assume the baked version is more authentic , perhaps I will make it sometime .
I made the fried ones , but unfortunately there was no one at home to enjoy these . I couldn’t taste as I had got a root canal done and was allowed soft food . I gave these to my cook and her companion , they both finished all these fried beauties with some tea . Their faces spoke ! And I was glad I had finally finished making the long awaited Ooty Varky !
Ooty Varky
Ingredients
1/2 cup wheat flour
1 tbsp rice flour
1 tbsp semolina
Pinch salt
Pinch cooking soda
2 tbsp sugar
1 tbsp ghee
Water for kneading the dough
Oil to deep fry
Method
In a mixing bowl add the wheat flour, rava, rice flour, salt and sugar, mix well.
Add the ghee and mix well.
Gradually add water and knead the dough to a chapati dough consistency .
Pinch out lemon sized balls and roll them .
Deep fry these balls in medium to hot oil till crisp and golden.

I made the baked version and absolutely loved them. Your fried version seems to be a hit based on the input of those who enjoyed them.
