Pakwan Pizza is a fusion pizza made with Sindhi crisp flatbread pakwan and poha which is a speciality of Madhya Pradesh. It’s a no-bake, no cheese pizza.
The name pakwan Pizza was new to me till I watched a street food video on Pushkar. Pushkar is a town in Rajasthan which is very popular for its temples and it’s a pilgrimage site for Hindus and Sikhs. It is famous for its annual fair which is called the Camel Fair, featuring a trading fete of cattle, horses and camels. The festival is held over seven days in autumn and attracts nearly 200,000 tourists.
Since Pushkar is a tourist town it caters to all cuisines. It’s strange that this small town has a wide range of international cuisine on the street! My nephew goes to Puskar to capture these festivities and has always spoken about the street food there, but somehow I have never been able to visit this town. While watching this street food video I was amazed to see this fusion pizza. The pizza was made on the crisp pakwan, which is a flatbread served with Bengal gram, and poha, the flattened rice.
The pakwan is the base of the pizza, while the daal is the purée, poha is the cheese and farsaan are the toppings! The chutneys well you could say are the olive oil and sauces! Interesting isn’t it? Well, I thought of replicating this street food with mini bite-sized pakwans, which are actually quite big, maybe the size of a large pizza. This street food has a burst of flavours, crisp pakwan with soft daal and poha, with a crunchiness from farsaan, onions and pomegranate pearls, and finally the sweet and sour flavours from chutneys. It’s quite a mouthful! Seriously you need to try this and I bet you will love it.

Ingredients
Garnish / Toppings
Farsaan ( choose what you like)
Onions, finely chopped
Tomatoes, finely chopped
Beetroot, grated
Pomegranate pearls
Coriander leaves
Sweet tamarind chutney
Spicy chutney
Chat Masala
Making Pakwan Pizza
Take a pakwan.
Spread the cooked daal over it, as though spreading purée.
Sprinkle a thin layer of poha.
Sprinkle the chutneys.
Sprinkle farsaan, onions, tomatoes, beetroot, coriander leaves and finally pomegranate pearls.
Finish with some Chat Masala.

I was thinking of the chocolate paan that you served for BM25. Those are also perfect for this theme,right? Coming to the fusion pizza here, it’s wonderful to see how much street food has absorbed the elements from all over the world.

This pakwan pizza sounds wonderful Vaishali. The dal and toppings as well the chutneys will compliment the crispy pakwan and would be such a delightful dish for sure.
What a wonderful Idea to use 2 different dishes/ingredients from different Indian cuisine.. it will be a perfect snack treat for parties and get togethers..or when you want something innovative for a weekend night!! Loved it!!
