Papad nu Chavanu

Papad nu Chavanu is a roasted crunchy Gujrati snack made with puffed rice ,gram flour vermicelli and fried papads .

Gujrat has different regions and each region has its own unique snacks . Today I shall take you to Khambat. Khambat is also called Cambay. It was once a important trading center , and is also very popular for sweets like Halwasan and Suterpheni.

The Papad nu Chavanu is a  mix where the puffed rice has to be roasted till crunchy , spices are added in and once cool , ingredients like sev and fried papads are added . There after the complete mix is tempered . One must remember that the papads used in this mix are the urad dal papads , which are easily available at all Asian stores.

We begin with keeping the fried papads ready along with gram flour vermicelli or Sev as we call it here. The papads have to be fried and we have to break them into pieces. The pieces should be of medium size . Do not crush them to a fine powder . Also you must make sure that they are fried to a good golden.

While roasting the puffed rice, do not add the spices immediately , they have a tendency to burn . So you begin by adding just a bit of turmeric to the oil. This will coat the puffed rice and we need to roast them till they are crunchy. One can add the spices after roasting, once the puffed rice is nice and crunchy.This puffed rice can be stored for a long time and you can use them for Bhelpoori or different kinds of crunchy snacks .

Once done we just need to mix all ingredients and some more spices and temper it and we are done with one of the best Namkeens. By the way this happens to be my elder daughter’s favorite . Now let’s get down to making it .

Ingredients

Chavanu

5 cups puffed rice
10 papads , fried
1 cup sev ( thin variety )
3-4 tbsp oil
1 tsp turmeric powder
2 tsp red chilly powder
Salt to taste

Tempering

2 tbsp oil
1 1/2 tsp red chilly powder
1/2 tsp turmeric powder
1/2 tsp asafoetida
1/4 tsp citric acid
11/2 tbsp sugar , powder

Method

Chavanu

Deep fry the papads and keep aside .
Take a big pan , add 2-3 tbsp oil.
Add turmeric and stir to mix it in the oil .
Add the puffed rice and mix .
Roast these on slow to medium flame .
After 2 minutes add salt .
Roast till they are crisp .
Switch off the flame .
Add red chili powder and mix.
Let them cool .
Now take a big mixing bowl and add the crushed papads.
To this add the sev and the roasted tempered puffed rice .
Mix all three gently .
Sprinkle red chilly powder , do not mix.

Tempering

Heat oil in a small pan .
Switch off the flame .
Now add turmeric powder, asafoetida , citric acid powder.
Pour this oil over the mix with red chilly powder .
Mix again .
Add powdered sugar and once again mix .
Store in a airtight container .

Ingredients

  1. Simple and guilt free snack. I have seen my Gujarati neighbor’s MIL stocking jars of snacks in their home and have come across this. Ab khud ko khos rahi hoon ki it didn’t occur to me to ask them for snack ideas for this marathon. 🙂
