For Day 2 under Special Theme , I am posting recipes from the Parsi Cuisine which I posted during our Mega Marathon under Protein Rich .When I read Caramelised Rice , for a minute I thought it must be some kind of sweet rice with caramel . The rice does require some sugar , but only to lend it a tint of brown . After reading the recipe , I was amused because this is how my mil used to cook the Sindhi Bhuga Chawara . The difference is only of the added spice in Sindhi Cuisine .

 

The Parsi Caramelised Rice is served with most Parsi Dishes like Dhanshaak , Parsi Daal etc . The  rice is simple but tastes fantastic and the highlight of this rice dish is the fried onions , they give the rice an excellent crunch .

 

 

Caramelised Rice

Ingredients

1 cup basmati rice
1 onion, sliced
1-2 bay leaves
1 stick cinnamon
2-3 cloves
1 tsp ghee
1 tsp oil
Salt to taste

Method

Wash and soak the rice for 30 minutes.
Heat oil in a pan and then add the sugar. Let the sugar boil without mixing. In a couple of minutes the sugar will caramelize to a golden .
Add the rice and 2 cups water.
In another pan heat the ghee and add the whole spices .
Add the onions and cook till pink.
Add the fried onions and spices to the boiling rice.

Caramelized rice is a Parsi delicacy, these are flavored with onions and taste awesome with Dhaanshak, they taste excellent on their own too.

      No I am not using a light box , but using porta light , which helps in getting better pics .
