It was during the Mega Marathon that I made a week of Indian Thalis which featured spreads with a Protein punch . Not all recipes had protein but the meal definitely was Protein Rich . The spreads were elaborate and I did not want my fellow bloggers to get extra burden of commenting during Mega Marathon so I posted only one recipe . I shall be sharing all recipes over a period of time . For today I have a Parsi Ravo , from Parsi Cuisne.

 

Parsi Ravo is a special dessert cooked on weddings , birthday , anniversarys and festivals in Parsi homes. This dessert has many versions , where vermicelli too has been used in some , though I adapted the recipe from here . The Ravo is just like our Sooji ka Halwa .
I am posting the Ravo for Day 1 under Special Theme .

 

Parsi Ravo

Ingredients

120 gm ravo/semolina
850 ml milk
200 gm sugar
2 tbsp ghee
1 tsp cardamom powder
180 ml water
Few almonds , sliced
Few pistachios , sliced
Few cashews , broken
1 tbsp each charoli and raisins
Few strands saffron

Method

Heat ghee.
Add ravo and roast till pink and lends out an aroma .
Add water and sugar and stir continuously .
As soon as the sugar melts gradually add milk and cardamom powder .
Add the crushed saffron .
Mix well and simmer the flame .
Cover and cook till you see no moisture and a gloss .
This should take just about 5-7 minutes.
Lightly fry the nuts and garnish.

Parsi Ravo

A delicious Parsi dessert served on special occasions, like weddings, anniversarys, birthdays.

Total Time 20 minutes

Ingredients

  • 120 gm ravo/semolina

  1. so inviting, its preps are mostly like sooji halwa.. loved it , sooji halwa is my all time sweet with all dry fruits. lovely click.

  2. The thali is just mind blowing. The glorified sooji halwa with all the nuts is mouth watering..
    Also the pictures in this post have a glow which makes it feel very special and divine. Is it me or have you changed your photography style??

    1. Harini , thanks a ton . The pictures were taken on a dull gloomy day but I have started using porta light which gives them a glow and of course editing helps .

  3. That is such a delicious looking bowl of ravo. It is amazing how different cultures have adapted the same dish in different forms…food is truly a unifying bond. Love your thalis as always…yum!
