Pineapple Jar Cakes are cakes made in a jar, which have a vanilla sponge , some pineapple pieces , pineapple syrup and fresh cream .
It was my grandson, Moh‘s first birthday and we celebrated it with a Baby Shark theme. The little boy had tremendous fun listening to his favourite song. He was amazed to see the balloons and the decorations, it was such a joy to see him so excited. The sad part was that even though we wanted to invite family and friends, we could not. He is a small baby and we didn’t want him to be exposed to outsiders.
Since we could not invite guests, we decided to send some favours to them. Juhi’s Jar cakes have been a hit, so we decided to send across these Jar Cakes. We decided to do two flavours, Chocolate and Pineapple. I have already shared the recipe for Chocolate ones. Today I shall share the recipe for the Pineapple Jars.
We made seven sheet cakes, with 3 cups of flour for each cake. The tray size that I used was 13 x 15”. We made 4 chocolate and 3 pineapple cakes. Each of these cakes yielded 16-18 jars. So in all, it was 125 jars. I used about 2 1/2 kgs of Callebaut dark chocolate chips, 5 litres whipping cream, 5 litres Amul cream and 4 pineapple tins for all these jars. I did not keep track of cocoa powder, but we used around 5-6 of 150 gms packing.
For today I am giving you the recipe of 1 cup cake , you can multiply according to your needs. Both the recipes, chocolate and vanilla are my go-to recipes and from Gayathri’s blog. There are times when I try new recipes, but trust me for basic sponge, I still haven’t found a more desirable recipe.
We took three days to make 125 jars.
Day 1, we baked 4 cakes.
Day 2 the cakes had cooled down so we started assembling. We assembled about 60 jars and dispatched all of them by early evening.
While these jars were being assembled, the rest of 3 cakes were put for baking.
Day 3, we finished assembling all the jars by afternoon and dispatched.
The paper flowers on the jars were made two days prior to baking.

Pineapple Jar Cakes
Ingredients
Cake
1 1/3 cups flour (maida )
3/4 cup granulated sugar
1/2 tsp baking powder
1 tsp baking soda
Salt-a pinch
3/4 cup milk
1/2 cup curd
1/2 cup oil
1 tsp vanilla essence
Other Ingredients
Pineapple titbits
Pineapple syrup
Whipped cream
Method
Cake
Preheat oven to 180°C.
Grease and line a 7″ round cake tin.
In a bowl mix together flour, sugar, baking powder, salt and baking soda.
Add the curd, oil, milk and vanilla in the centre.
Mix it to form a smooth batter.
Pour it into the prepared cake tin.
Bake for 30-40 minutes or until a toothpick inserted comes out clean.
Rest it on the wire rack for 10 minutes.
Flip on the wire rack.
Cool it completely before wrapping in cling wrap.
Refrigerate until assembling.
Assembling the Jars
Crumble the cake.
Using a piping bag pipe out the cream at the bottom of the jar.
Add a layer of crumbled vanilla cake.
Drizzle some pineapple syrup.
Add pineapple titbits.
Pipe out a layer of whipped cream. Repeat the cake layer, topping with syrup, pineapple bits and finally with cream.
Garnish with mint and pineapple.
These jars were really liked by everyone and we got big orders for Diwali so we decided to give our venture a name – Juhi’s Bakery.
