Quinoa Kheer is a Indian fusion dessert made with the super grain Quinoa and milk . The grain is gluten free.
Kheer is a traditional Indian dessert made with rice and milk which is very popular all over the country . Milk and rice are simmered and reduced to give a creamy consistency to make Kheer . It surely is amazing to see the different variations and perhaps each state has its own variation . I have always been fond of this dessert and have more than 25 Kheer recipes on the blog .
For today under the theme Fusion at it’s Best , I have a Quinoa Kheer . Quinoa is a super food , gluten free , which is getting very popular across the world for its health benefits . I have cooked this protein rich grain with milk to get that creamy consistency and added some vanilla essence to give a fusion twist .
The quinoa kheer is a very pleasant change from the traditional Indian kheer . With vanilla. Quinoa kheer is more on the western style desserts . Do give it a try and yes check out some more kheers here.
Quinoa Kheer
Ingredients
1/4 cup quinoa
1 tsp ghee
1 cup milk
3 tbsp sugar
Few drops vanilla essence
Almonds
Method
Wash and rinse quinoa , soak it for 10-15 minutes .
Drain and keep aside .
Heat ghee in a pressure cooker .
Add the drained quinoa and sauté for3-4 minutes .
Add 1/2 cup water and pressure cook for 2 -4 whistles .
Let the pressure release and open the pressure cooker.
Quinoa should be well cooked .
Add milk and cook on simmer till the milk has reduced 1/4.
Add sugar and cook for another 5-7 minutes on slow flame.
At this point you could minus sugar and add 2-3 tbsp of condensed milk .
Remove from fire and add vanilla essence .
Serve hot or chilled.
Garnish with almonds .

Yummy yummy. I have made quinoa Kheer too some time ago but with jaggery. Sugar and vanilla version sounds great too. Will try next time

Healthy twist to kheer with addition of quinoa. Very simple recipe . Should give it a try sometime soon.
Adding vanilla to the kheer definitely adds a new dimension. Quinoa in kheer definitely qualifies as a fusion. Love it.
