Allahabad ki Tehri
Allahabad ki Tehri is a one-pot meal with rice and vegetables. This Tehri is from the city of Allahabad which is located in the Indian state of Uttar Pradesh.

Instructions
  1. In a large pot add ghee.
  2. Let it heat, add all ingredients under whole spices.
  3. Sauté till the seeds crackle and you get an aroma.
  4. Add ginger-garlic paste.
  5. Add green chillies.
  6. Sauté till the raw smell goes away.
  7. Add the vegetables, turmeric powder, coriander powder, cumin powder and salt. Sauté for a minute or two.
  8. Add the washed, soaked drained rice.
  9. Cook for a few minutes and then add the yoghurt.
  10. Mix again, now add 3 cups water.
  11. Cook on full flame and then simmer once the water is absorbed. We are following the Absorption method of cooking.
  12. Drizzle some ghee before serving.
