Phanu is a special curry which is a specialty of the Uttarkhand state. Phanu is made in many versions. Normally it is made with the Gahat ki Daal that is available in the hills , but it can be made with the black garbanzo beans too. The beans are soaked and coarsely crushed . These are then cooked with spices and herbs. Served with rice the curry it has a delicious, pleasing flavor. This is a recipe by the chef of Fortune Resorts of Mussoorie.

Ingredients
1/2 cup black Gram
4-5 cloves garlic
1 onion
2 green chilly
2-3 tomatoes
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp red chilly powder
Fresh coriander leaves
Method
Soak the gram overnight, wash well and make a coarse paste of it.
Keep aside.
Chop garlic, onion and green chilly finely.
Chop the tomatoes.
Heat oil.
Add garlic and onion, Saute till pink.
Add green chilly and tomatoes.
Add the dry spices and salt.
Cook for 2-3 minutes.
Add the paste.
Roast for 4-5 minutes and immediately add hot water.
Let cook for 15-20 minutes on slow fire.
While cooking foam will come up, keep removing from time to time.
The Phanu should have cooked during this time, check and adjust the spices and consistency according to your taste.
The consistency should be that of Sambar.
You could even make this with chick peas.
Phanu is a part of the Uttarkhand Thali.
