Sai Bhaji Koftas
Sai Bhaji Koftas are koftas or deep fried dumplings made from the popular Sindhi dish SaiBhaji . Sai Bhaji is a mix of veggies , greens and lentils .

  1. Using a non stick pan , add the ready saibhaji to it .
  2. Let cook on full flame , stirring at regular intervals .
  3. Cook till the saibhaji is completely dry .
  4. Switch off the flame , let cool .
  5. Add all the ingredients mentioned and mix well .
  6. The cooked Sai Bhaji has salt so make sure you add just a pinch .
  7. Grease your hands and pinch out lemon sized balls .
  8. Heat oil and drop them two at a time .
  9. Fry till golden and crisp .
  10. Alternatively use your air fryer to make them crisp .
  11. The koftas are ready .
  1. Heat 2 tbsp oil and add onions .
  2. Cook till they turn golden .
  3. Add ginger garlic paste .
  4. Cook for another minute .
  5. Add tomatoes .
  6. Cook till the moisture disappears .
  7. Switch off the flame and let the mix cool.
  8. Once cool blend it to a fine paste .
  9. Transfer back to the pan .
  10. Add the dry spices and cook for 2-3 minutes or till oil separates .
  11. Add water to adjust the gravy consistency .
  12. Let boil a few minutes .
  13. Add the Koftas and serve.
