Yak Dar Behesht is a Persian Rice Pudding which literally means Ice in Paradise. Yakh is Ice, Dar is in and Behesht is Paradise. The dessert has been so aptly named.
Yakh Dar Behesht is a milk-based dessert, which is very delicate and aromatic. The dessert is soft, light and tastes divine. The Rosewater gives it a wonderful aroma and flavour.
The key to a lump-free Yakh Dar Behesht is to stir it constantly to avoid lumps. The pudding can be served either in individual bowls or it can be set in a big flat tray and then cut into the desired shape. The garnishing too can vary. Whatever tweaks you do, make sure you serve the dessert chilled!

Yak Dar Behesht
2 cups milk
3/4 cups rice flour
2 cups water
1 cup heavy whipping cream
3/4 cup sugar
5 tbsp rose water
Dissolve rice flour in water and pour into a saucepan, place over medium heat.
Whisk milk, cream, and cornstarch in a bowl and pour into the saucepan.
Bring rice flour and milk mixture to a boil.
Add sugar and rose water, reduce heat to low and simmer, stirring constantly, until sugar is dissolved and pudding thickens.
Pour into bowls and garnish with nuts and rose petals.
Place in the refrigerator, chill and serve.
