Rose and Pistachio Stuffed Dates are absolutely delicious and nutritious dates that have been stuffed with pistachios, honey and rose water.
Rose and Pistachio is a combination made in heaven and they make an excellent stuffing for dates. Dates, as such, are quite delicious, but with a stuffing, they are a level higher.
Middle Eastern countries have such a huge variety of these Stuffed Dates that a person gets confused as to what to buy. They even have a huge variety of regular dates and one can use any variety while preparing these stuffed ones. Medjool dates work the best, but I love Kimia and always have a stock of these, so went along with them.
Choose the greenest quality of pistachios, they taste excellent and look so so pretty and vibrant after being mixed with honey and rose water. They not only look pretty but lend a heavenly flavour.
I made the Rose and Pistachio Stuffed Dates for the Iftar Platter which was specially made for the Thali and Platter Festival for our September Mega Marathon.
Rose and Pistachio Stuffed Dates
Ingredients
15-20 dates ( Medjool / Kimia )
1/2 cup pistachios
1 tsp honey
Few drops of rose water
Rose petals
Method
Whizz the pistachios in a food processor for a few seconds to get a crumble like mixture. Empty it in a bowl, add honey and rose water and mix.
Slit the dates lengthwise and remove the stone.
Stuff the dates with the pistachio mix. Garnish with rose petals.

Ingredients

I make almond stuffed dates but this pistachios sounds amazing.
I love stuffed dates too and tell me about the confusion about buying. When our friend took us to the market in Abudhabi, I was amazed and I didn’t know which one to pick. Some amazing flavors and I am sure these pistachios and rose stuffed dates would be really refreshing.
You are so right, you literally get confused with the dates variety. I was at Dubai Airport last year wishing to buy some, and I really could not make my mind as what to buy. My husband would definitely enjoy this dates with pistachio stuffed in it. Yummy and healthy treat.
