Rujak is a Indonesian salad, which is very popular. One can use any combination of fruits or vegetables . This salad was on my to do list since the past 4 years. I had read about this in a book which is written by Indian ladies residing in Japan. The book has recipes from all Asian Countries.  I followed the recipe from the book which had fried tofu, bean sprouts , pineapple and cucumber. The salad had wonderful flavors and we enjoyed it but we did not like the fried tofu in this salad. The next time I make this I will omit it and add some more fruits like mango and lychees.

This salad was a part of the Indonesian Meal that I served.

Rujak
1 cup bean sprouts, steamed
1/2 cup baby spinach
1 cucumber, sliced
1/2 cup fried tofu slices
1/2 cup pineapple, sliced
Salt to taste
1/2 cup, roasted coarsely ground peanuts
Dressing
1/4 cup tomato ketchup
1 tbsp soy sauce
Lemon juice
Chilly sauce to taste
1-2 tsp sugar
Salt to taste
Mix all ingredients and pour the dressing just before serving.
