Soya ki Seekh is a Indian snack made on skewers with minced soya granules and spices . These rolls on sticks are roasted on charcoal .
Soya is full of protein and a wonderful substitute for meat . Delicious kebabs can be easily made with it .
I have never been fond of soya , but have always enjoyed it in the form of Kebabs . I make a version of Soya Lucknowi Kebabs which are a big hit in our house , but this time I wanted to try a new version for this Soya ki Seekh .
In whatever form you make soya , these granules have to be soaked in hot water , they fluff up in a while and then these need to be washed well . You might see some froth in the beginning , but as you wash it , the water will become clear . Squeeze all the water . Now you need to sauté the soya to remove any leftover moisture and then we are ready to use the soy for kebabs .
The kebabs make a great snack for the vegetarians and vegans , the kebabs are protein rich and are perfect as a snack or a meal if served with some kind of Indian paratha .
One can change the shape of the seekh and make a patty , it will make a wonderful stuffing for a burger . The same stuffing could even be used to stuff a paratha . But for today it’s a seekh and these have been shaped on wooden skewers and roasted on a nonstick griddle . Soya ki Seekh
Ingredients
11/2 cups soya granules
3 potatoes , boiled
1 tsp ginger garlic paste
1 tsp coriander powder
1/2 tsp garam masala
1/2 tsp red chilly powder
1/4 tsp black pepper
1/4 tsp dry mango powder
2 tbsp roasted chick pea flour
Few finely chopped mint leaves Salt to taste
Method
Add soya to hot water and allow to soak until softened.
Drain and squeeze up excess frothy water. Rinse them twice more with cold water and squeeze off well to remove excess water.
Peel the boiled potatoes and mash them.
Dry roast the chickpea flour until it turns aromatic.
Heat a non stick pan and sauté the soya till completely dry.
Now add the ginger garlic paste and sauté .
Switch off the flame and add boiled potatoes , roasted chickpea flour and all the spices.
Mix well with hand.
Grease your hands and shape them on to skewers or ice cream sticks . You could simply make them into round pattice.
Drizzle some oil over the non stick tawa and roast till golden.
Alternatively you could shallow fry or deep fry or if you wish you can pop them into a air fryer too .

These seekh kebabs are so interesting, that it is hard to believe these are vegetarian! I would love to dunk these into some chutney and have with my chai… Yum!
