Strawberry Vanilla Panna Cotta is a jelly-like Italian dessert made with cream and strawberries. It is a light refreshing dessert.
Panna Cotta is one of the easiest desserts, where the cream is cooked with sugar and it is set with gelatine. Gelatine is a flavourless food ingredient, derived from collagen taken from animal body parts. This is a gelling agent and helps the pudding to set, it is also used in many other products. Since we are vegetarians and do not consume gelatine and use agar agar which is plant-based and a great substitute for gelatine.
What is Agar Agar?
Agar Agar is a vegan gelling agent derived from seaweed. It has many uses but is used primarily used in cooking. Agar agar is odourless and tasteless which makes it convenient to use. It sets more firmly than gelatin and stays firm even when the temperature heats up.
The Panna Cotta can be made with various flavours, I have made a strawberry vanilla flavours, but one can flavour the cream with just about any flavour. The wobbly jelly tastes excellent. The dessert can be made in various ways as we need a mould for setting the dessert. I have used simple shot glasses and created a pattern by tilting the glasses and allowing the jelly to set. I also poured some of the strawberry puree into a round tray and these dots looked very cool and decorative.
If making a pattern like this or making a two-layered pudding always remember to allow the first colour to set completely, else the colours might mix, making the dessert shabby. It is best to make these into individual servings and don’t forget chilling the dessert.

Strawberry and Vanilla Panna Cotta
Ingredients
Strawberry
2 tbsp water, warm
1 tsp agar agar/gelatin
2 cup strawberry purée
Vanilla
1 cup milk
¾ cup cream
1 tsp agar agar/gelatin
½ cup powdered sugar
1 tsp vanilla extract
Method
Strawberry
Add 1 tsp agar agar to the 4 tbsp warm water.
Mix well and place on the stove , stir to dissolve completely.
Make sure you have about 2 tbsp of water after cooking.
Add strawberry puree and mix well.
Remove from fire.
Place the serving glass in a bowl so that it gets tilted slightly, you could also set the glass in a muffin tray.
Pour the prepared strawberry mixture till it reaches the rim.
I poured some in a round mould too.
Refrigerate for 2 hours or overnight, until it sets completely.
Vanilla
Heat milk and cream together.
Whisk and mix well making sure the cream combines well with milk.
Add agar agar and whisk continuously.
Cook the milk on medium-low heat till agar agar has dissolved.
Add powdered sugar and stir till the sugar dissolves.
Remove from fire and add vanilla extract.
Whisk and mix well.
Let the milk cool for about 5 minutes before pouring to the glass.
Add the prepared strawberry dots that are set.
Let the pudding set, refrigerate, serve chilled.
