Subz Tawe ki Shami are delicious ,melt in the mouth Kebabs made with minced veggies and spices .
For this week I have picked the theme Anything you can Snack On ! Now this is such a wide theme , one really gets lost ! So, I picked another theme on this and decided to make Kebabs for all three days . Three kebabs to snack on !
The Kebabs originated in Middle East , but definitely are a very popular snack in India . Normally when we say Kebab we always think of meat kebabs , but with increase of vegetarianism and vegans , a lot of varieties and recipes have come up for them.
While we had the hotel , the restaurant served a big variety of both veg as well as non veg kebabs . The chef was always eager to try new recipes that I gave him . We tried the vegetarian versions of famous Kakori Kebabs , Galauti Kebabs and many more .
Today’s Subz Shami Kebab too come from a non veg variety – The Shami Kebabs ! Normally the non veg ones are made with minced lamb , here I have used minced veggies and binded them with chickpea flour . The non veg ones could be binded with flour/ eggs or even mashed chickpeas .
One can use any veggies to make Subz Shami Kebabs but we need to remember that while boiling or blanching them , they would have some moisture , and we need to remove that . Best is to squeeze them in a muslin cloth . The drained water can be used for binding the dough or adding to curries .
Once we have prepared the veggies we need to add potatoes , spices and the binding . We can make the kebabs on skewers or form patty or even make rolls . We can bake them , deep fry , shallow fry or even use a air fryer to cook these beautiful kebabs .
Drizzle some chaat masala and lemon juice and serve them with some green chutney and onions and you have a feast !
Subz Tawe ki Shami
Ingredients
1 carrot , diced
100 gm bean green, finely chopped
100 gm peas
50 gm cauliflower
200 gm potatoes
2 green chilli
2 inches ginger
2 tbsp cumin powder, roasted
3 1/2 tbsp roasted gram flour (besan)
1/4 tsp black cardamom powder
1 tsp chaat masala
Salt to taste
Method
Boil the potatoes , peel and mash them . Blanch all the vegetables and process them together coarsely in a blender place in a piece of muslin cloth and squeeze gently to remove excess water.
Mix the potatoes and veggies .
Add the green chilies, ginger, roasted gram powder, roasted cumin powder, cardamom powder, chaat masala and salt.
Mix well , check for seasoning .
Pinch out small balls from the mixture and shape into patties.
Shallow fry or deep fry or roast them over charcoal.
Serve with mint chutney, onions and lemon slices.
