Weekend Cooking
We cook throughout the week, but weekends are special, when we are more relaxed and perhaps want to try new cuisines or dishes.For us weekend is only Sunday .we work on Saturdays too. Sunday, is one day when the family is together, so naturally, one wants the best. With a family like ours, the breakfast is normally fruits, hardly any cooking…lunch in Sindhi family’s is kind of fixed Kadhi Chaawaran! Where is the scope to try new stuff/..well I try my stuff in the evenings, and at times dinner..That is If I am cooking, you see at times I am lazy to cook on my holiday and we get food from outside!! Anyway for this week it’s Thai Curry!.
So from now on you will see a weekly post, every Monday with weekend cooking. My co bloggers, Srivalli and Champa will join in this lovely event , where you will find three of us cooking different stuff. It can be any course of the meal!!So do tune in every Monday for some special cooking!!
Thai Curry
Green Curry Paste
1 cup chopped coriander
1 tbsp lemon juice
2 tsp cumin seeds
1 tbsp coriander seeds
5 green chillies
1/4 cup lemon grass
Blend lemon grass with 1/4 cup water.
Strain.
Discard lemon grass.
Combine rest of the ingredients and blend, using the lemon grass water.
Curry
2 1/2 cups coconut milk
1/2 cup green peas
1/4 cup capsicum cubes
1/4 cup mushroom slices
1/4 cup baby corn, sliced
1/2 cup cottage cheese / tofu
1 tbsp sugar
salt to taste
Parboil the peas, capsicum, corn and mushrooms.
Deep fry the tofu.
Heat oil in a wok, add the green curry paste.
Saute’ for a minute.
Add coconut milk.
Add the vegetables, tofu, sugar and salt and simmer till the veggies are done.
Serve hot with steamed or Garlic rice.
You could use any veggies that you like.
Garlic Rice
1 cup rice, cooked with salt
1 tsp garlic
1 whole red chilly
Coriander leaves, finely chopped
Heat oil.
Add garlic and chopped red chilly.
Add rice.
Add coriander leaves.
Toss and serve hot.
Enjoy this steaming hot meal!!
