Today I have chosen a nutrition packed one pot meal for picnic which will be relished by all.Vegetable Corn Handvo,a savoury cake full ofvegetables,rice and corn and a crunch of sesame seeds,sanwiched with tangy ketchup.This has a blend of all flavors…slightly sweet,spicy and tangy…of course we can alter it according to our tastebuds..lot of variations could be made you just have to be innovative.
I picked up this dish from one of my good friends,who was my neighbor too..infact till the time we stayed next doors I never made it.Since we live away I had to try my hands on it.
What we need

What we need
2 cups………… mixed vegetables finely chopped and boiled.
Cabbage
Peas
Carrots
Cauliflower
Beans
Capsicum
2 cups………… corn kernels crushed
1 cup………….. corn kernels(boiled)
2 cups……….. cooked leftover rice
½ cup…………. maize flour /bread crumbs
1tsp……………. red chilly pwd
½ tsp………….. haldi
Salt to taste
2tsp……………. lemon juice
1tbsp………….. green chilly ginger paste
Mix all the ingredients very well.
Tempering
2tbsp oil
1tsp mustard seeds
1tbsp sesame seeds
Pinch hing
Add the tempering to the prepared mix and mix well.

Curry leaves
Other ingredients…
Tomato ketchup
Green chutney(recipe)
Assembling the Handva
Spread a layer of the prepared mix in a baking dish.
Spread a thin layer of tomato ketchup .
Spread the third layer of the veggie mix.
Temper with musturd ,sesame seeds and curry leaves.
Bake at 200deg for 30 minutes.
Since everything is precooked you dont have to worry much.
This will be quite soft .
Serve with green chutney.
I have made some mini ones also for that I spread some tempering in muffin moulds ,followed the same layering procedure and baked.(these have some extra ketchup).once done cooled them a little and here you are!!
you could pack the mini ones in small round disposable containers.cover with a cling film.The best part is this Handvo is enjoyed cold too.
