Watermelon Mojito is a perfect summer drink that can be put together in just 5 minutes. It is cool and refreshing which gives instant energy.
I am not a great fan of fruits, but watermelon is one of the fruits that I like. It is very refreshing and perfect for any time of the day. A mocktail with this fruit is one of the best drinks you can enjoy. It is light, fresh, cooling and just right to cool you down in summers.

Ingredients
Watermelon: Seasonal watermelons are deep red and very sweet. Choose a melon with bare minimum seeds. If there are any, remove them.
Sugar or Sugar Syrup: Sugar depends on the sweetness of the watermelon. Alternatively, you can use sugar syrup or maple syrup. And if the watermelon is sweet, you may not require any sugar at all.
Mint Leaves: Fresh, crisp mint leaves add a wonderful aroma as well as flavour to the Mojito.
Lemon Juice: Freshly squeezed juice enhances the flavour of the drink, however, you can use cold-pressed juice too.
Lemon Wedges or Slices: They impart a delicious citrusy flavour when muddled.
Ice Cubes: Perfect for chilling the drink.
Club Soda: Club Soda adds a nice fizz to the cocktail. Alternatively, Sprite, Sparkling Water or even Flavoured Sodas work very well.

How to make Watermelon Mojito?
Chop the watermelon into cubes and discard any seeds it has. Now blend it into a puree. You can sieve it, but I like the fibre from the fruit so I prefer not to.
Next, wash the fresh mint leaves, and cut lime wedges, add them to a glass or jar. Add sugar and muddle the mix till the leaves are slightly bruised and flavours released.
Now divide this mixture into three glasses, add watermelon puree, lemon juice and ice cubes.
Gently pour the club soda or sparkling water or sprite.
Stir it and garnish with mint leaves, lemon slices and watermelon wedge.
