Yakh Dar Behesht
Yakh Dar Behesht is a Persian Rice Pudding which literally means Ice in Paradise . Yakh is Ice , Dar is in and Behesht is Paradise .
- 2 cups milk
- 3/4 cups rice flour
- 2 cups water
- 1 cup heavy whipping cream
- 1/4 cornstarch
- 3/4 cup sugar
- 5 tbsp rose water
- Rose petals
Dissolve rice flour in water and pour into a saucepan , place over medium heat.
Whisk milk, cream, and cornstarch in a bowl and pour into the saucepan.
Bring rice flour and milk mixture to a boil.
Add sugar and rose water, reduce heat to low and simmer, stirring constantly, until sugar is dissolved and pudding thickens.
Pour into bowls and garnish with nuts and rose petals .
Place in the refrigerator , chill and serve .
