Skillet Bread with Beans

Freshly baked bread served with Mexican beans makes a delicious dinner and a one pot meal.

Ingredients

Bread

  • 300 gms all purpose flour
  • 1 tsp yeast
  • 1/2 tsp salt
  • 2 tsp sugar
  • 6 tsp milk powder
  • 4 tsp butter

Beans

  • 1 tbsp olive oil
  • 3-4 cloves garlic chopped
  • 1/2 cup onion chopped
  • 2 green chillies
  • 1 cup boiled kidney beans
  • 1/4 cup tomato purée
  • 2 tbsp tomato ketchup
  • 1/4 tsp oregano
  • Chilly flakes to taste
  • Salt to taste

Other ingredients

  • Cheese

Instructions

  • Warm water and add yeast, salt , sugar, milk powder and butter .
  • Sieve the flour.
  • Adding the warm water mix , bind the dough .
  • Cover and let rest until double.
  • Punch down the dough and make balls and set them all around the skillet leaving the centre empty.
  • Cover the skillet and let the bread rest for 15 minutes .
  • Meanwhile prepare the stuffing .
  • Once the stuffing is ready place it in the centre .
  • Grate cheese over it .
  • Apply a light milk wash to the bread and sprinkle oregano , chilly flakes and some cheese.
  • Bake at 180 deg C for 20-25 minuets .
