X - Xmas Cake

Earthy Xmas fruit cake with the goodness of nuts and dried fruits.

Ingredients

For Soaking

  • 1/2 cup orange juice / apple juice
  • 1/4 cup dates chopped
  • 1/4 cup almonds & cashews chopped
  • 2-3 glazed cherries chopped
  • 1/2 tbsp tutti fruity
  • 1/2 tbsp candied peel
  • 1/4 cup currants & raisins
  • 1/4 cup brown sugar

Dry Ingredients

  • 1 cup all purpose flour
  • Pinch salt
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp coffee
  • Pinch cinnamon
  • 1/4 cup brown sugar

Wet Ingredients

  • 3 tbsp oil
  • 1 tbsp curd +1 tbsp water
  • 1/4 cup milk
  • 1 tsp vanilla essence

Instructions

For Soaking

  • Add sugar to the juice, stir a couple of times and then add rest of the ingredients under soaking. Soak all ingredients overnight.

Next Day

  • Mix all dry ingredients.
  • Mix all wet ingredients
  • Mix the wet ingredients with the soaked ingredients.
  • Now add in the dry ingredients gradually.
  • Grease and line a baking tin.
  • Pour the batter in the tin and bake at 180 degrees C for 40-45 minutes or till a skewer comes out clean.
  • Let cool before slicing the cake.
