Yak Dar Behesht is a Persian Rice Pudding which literally means Ice in Paradise. Yakh is Ice, Dar is in and Behesht is Paradise. The dessert has been so aptly named.
Yakh Dar Behesht is a milk-based dessert, which is very delicate and aromatic. The dessert is soft, light and tastes divine. The Rosewater gives it a wonderful aroma and flavour.
The key to a lump-free Yakh Dar Behesht is to stir it constantly to avoid lumps. The pudding can be served either in individual bowls or it can be set in a big flat tray and then cut into the desired shape. The garnishing too can vary. Whatever tweaks you do, make sure you serve the dessert chilled!
I have been posting Milk-based Desserts this week. The previous one was Gulab Phirni, here are some more Milk-based desserts you can enjoy.

That is such an exotic rice pudding. It looks so creamy and decadent. I’ve never made a rice pudding with rice flour – will have to try this one soon.
When I read the recipe, it brushed across my memory and as soon as I saw the pictures, I remembered, I had cut the recipe from a magazine and stuck it in my scrap book. It was square cut pieces and I have been wanting to make this since so long… Thank you for reminding me of it. Your dessert looks just too tempting enough to stretch the hands to pick it up…
This is a sinful pudding vaishali…must have surely been so creamy!
smooth and creamy puddings are so appealing as desserts, not to mention relatively easier to prepare. That bowl looks so delicious and I love that contrast between the pink rose petals and the smooth white pudding
Wow, pudding looks so nice and creamy. Definitely would have tasted awesome.
I want to try this creamy and delicious pudding. love the garnishing on the top
