Zero Oil Thali

Zero Oil Thali is a spread of Indian dishes that are cooked with absolutely zero oil and yet it’s a great spread that tastes delicious. You don’t miss the oil or ghee.

For the last two days, I have been posting Thalis. Day 1, it was a Sindhi Thali, Day 2 it was a Rajasthani Thali and for Day 3 under the theme Thalis and Spreads I wanted to cook a Bengali Thali, I had kind of shortlisted the menu but then realized that the authentic Bangla cooking uses mustard oil. I simply love this flavor but my hubby just can’t take it. As a result, I gave up the idea of the BanglaThali. The search began for a fresh Thali. I pulled out my cookbooks and I saw a Zero Oil cookbook. Yes, this sounded interesting. I planned the menu spot on and revolved it around Rajma which was already planned for lunch. After I finished cooking this meal, I realized that we can cook most of the dishes without oil or fat.

Eating fresh is the key. Any freshly cooked food tastes wonderful, if it is zero oil then all the more. I finished cooking this entire thali in a little more than an hour with four gas burners and partly cooking in the microwave . Trust me zero Oil cooking tastes equally good and you cannot make out that the food has been cooked without oil . Above all eat your heart’s content and not feel guilty.

So here is the menu that I have selected, I wanted to add a leafy green veggie, but since this was not a planned thali I cooked with the veggies in the frig.
